Light roast, anaerobic natural process. Zambia is not traditionally known as a big coffee producer, although coffee has been grown there since the 1950s. This coffee comes from Kateshi Estate, a group of farms near Misambo town in the northern part of the country. The anaerobic processing is done by sealing the coffee cherries in airtight containers with no oxygen present, for several days. After that, it's spread out and dried in the cherry over several days. Anaerobic naturals are known for their funky, fermenty flavors and this one is no exception.
