Light-Medium roast, yellow honey process. Don Mayo is the name of the Bonilla Family's micromill, located in Tarrazu. Hector Bonilla and his sons run the farm and mill, with this coffee coming from a part of the farm called Pedregal. The coffee here is grown at around 1750 meters and processed on site. This lot, a yellow honey process, is partially depulped, then dried on patios and raised beds.
