Light roast Colombian coffee, double anaerobic natural process. Jairo Arcila and his team have been at the forefront of coffee innovation; taking high quality coffees and further developing the flavors inherent to the bean. This coffee went through an extended double fermentation where the fresh cherries are fermented for about 24 hours in an anaerobic environment. Following, the fermentation is extended inside large bags submerged in a water tank to control temperatures. The coffee is then dried on raised beds, resulting in a uniquely winey and fruit-forward cup.
