Medium roast, certified Fair Trade and USDA Organic, honey process. Produced by Herminio Perdomo Romero at his 28 hectare farm, Alto de los Santos in Corquin. This Caturra varietal was picked at peak ripeness and depulped the next day, before being fermented for 48 hours and dried for 26 days. Honey processed coffees like this one use less water than traditional washed process coffees, and often have unique flavor notes imparted from the coffee cherries.
