Medium roast, Swiss Water Process Decaf. This coffee was selected from lots in the La Libertad community of Huehuetenango. Unlike many decaf, the lots were selected specifically to produce an amazing decaf. Too often, subpar lots are relegated to decaffenation because they're simply not good enough. The decaffeination processed was done by Swiss Water in Vancouver, BC, known the world over for their chemical-free, water-based decaf process technic that is gentle on the coffee and retains some of the volatile compounds that affect flavor and aroma.
