This top lot from El Salvador is not only honey process, but 100% castillo varietal - and the two go hand-in-hand, here's why: Honey process coffees are known for their creamy body and round sweetness, which is also what castillo is known for. This coffee would make amazing espresso, but also has a clean, sweet, and complex cup as a pourover as well.
