Light roast Colombian coffee, anaerobic double-fermentation washed process.  David Tao grew up around coffee farming, but only recently began farming himself.  In fact, this is the first coffee he's had exported out of the country.  After lovingly caring for the coffee trees, the cherries are hand picked and double fermented - with the second fermentation being fully anaerobic.  When we first tasted this lot in a blind cupping, we were so taken aback by the sparkling acidity and complexity that it actually reminded us of a really nice Kenyan coffee!  We kept the roast light to accentuate florals and acidity.

 

We are proud to have sourced this coffee through Cosecha Traders.  Since its founding, Cosecha Traders has worked with many farmers in Colombia despite the pandemic, social protests, and armed conflict to help them import their coffee to the USA, gain access to competitive specialty markets, and to develop this nascent origin. 

 

12oz, 340g Note: This coffee is whole-bean. We feel this is the best option to preserve freshness, flavor, and aroma. If you need your coffee ground, please choose a grind level option and we'll be happy to grind it accordingly.
